Grilled Beet Salad

oh-so-very-pretty-grilled-beet-salad-cover

The summer weather has officially hit Vancouver and we are embracing it like there’s no tomorrow. I had the most wonderful weekend basking in the hot sunshine, playing softball, riding my bicycle around the seawall, picnicking with friends & fam, and playing indoor beach volleyball (this one doesn’t count as basking in the sunshine but it definitely got me excited for beach volleyball). Not only do I love summer weather for the billions of fun activities you can do in Vancouver in the sun but I also love it because it means BBQ season! Personally, I’m not a huge burger … Read more

Lemon Lentil Chickpea Quinoa

oh-so-very-pretty-lemon-lentil-chickpea-quinoa-1

Sometimes your body needs a reboot. The sun is coming out in Vancouver, the temperature is getting above 10 degrees, and we all know what that means… barbecue season. Beers on the patio, steaks and chicken on the grill, vegging on patio chairs in the sunshine. Even though it’s the perfect way to live the life and spend your summer days, barbecuing really isn’t the greatest thing for your system. So sometimes a nice cleansing lunch/dinner is a nice present for your body.

Heidi from 101 Cookbooks always has the greatest, most scrumptious-looking, healthy cleanse food that does the body … Read more

Kale Apple Tofu Miso Salad

oh-so-very-pretty-kale-miso-salad-COVER

Kale is a funny thing. It’s branded as one of those turn-of-the-age coined terms: a “SUPERFOOD”. Kale is:

  • Low in calories
  • High in fibre
  • Zero fat
  • High in iron
  • High in Vitamin K
  • Filled with antioxidants
  • Great for cardiovascular support
  • High in Vitamin C & A
  • A great detox food
  • High in calcium

As you can see there are many, many, many reasons why you should eat kale. The only unfortunate thing is that sometimes it can take a little bit of time to adjust to the taste and texture of kale. When Eric first tried this salad he winced … Read more

Miso Cabbage Slaw

miso-cabbage-slaw-cover

I love slaws. They make me very gassy at times, but I love the crunch and I love the tang. I also love fusion dishes that infuse the flavors of different cultures into  a traditional recipe. For instance, a miso-infused cabbage slaw.

It’s nutritious, delicious and oh-so-very tasty.

P.S. the manly hands in this post are the hands of my very talented assistant Eric (also known as, the boyfriend). This post is his claim to fame as he has been waiting for his chance to be featured in the blog. He wanted Greek god poses of himself, but fortunately for … Read more
