Vegan Cheezy Kale Chips


Recently I’ve been taking part in a challenge at work called the 28-Day Vegan Challenge. Pretty self-explanatory, be vegan for 28 days. Easy you say? I thought it would be, considering the fact that I don’t really eat too much meat on a regular basis. However, the task proved more challenging than it seems. Massaged Mango Kale Salad


 Summer barbecues, vacation food spoils, sometimes those few months in the summer have the power to throw off our whole diet. One superfood to help get  your system back on track is kale. Kale can have a tendency to taste harsh and raw but I found that massaging the kale with olive oil can really help to tenderize the kale. 

Recipe: Massaged Mango Kale Salad


  • 1 bunch kale 
  • 1/4 cup olive oil
  • 1 lemon juiced
  • 2 tsp honey

Baked Salmon in Parchment

I think my favourite fish to eat is salmon… that’s a lie. I love black cod. But I do love salmon very much. It’s such a versatile fish. You can have it baked, steamed, fried, barbecued, you name it, you can have it. I’ve had it just about every way and no matter how it’s done I end up loving it just the same.  Kale is a funny thing. It’s branded as one of those turn-of-the-age coined terms: a “SUPERFOOD”. Kale is:

  • Low in calories
  • High in fibre
  • Zero fat
  • High in iron
