Curried Apple Couscous


 When you’re about to fly away on vacation to one of the biggest food countries of the world, filled with the greatest pasta, bread and pizza in the world, you want to make sure you want to fill your body with feel good ingredients before filling it with carbs galore. 

Here’s one of my go-to recipes for a quick and easy weeknight, whole-grain, healthy meal.


Recipe: Curried Apple Couscous


  • 1 apple, cut into 1/2 inch cubes

Baked Blueberry Oatmeal in a Jar


 Sometimes it’s difficult to cook for just one. You get an itch, want to bake and often times recipes are for 4-6 servings (of which I along am not). Asparagus with Poached Egg


 One of my all-time favourite novels is Eat, Pray, Love by Elizabeth Gilbert. Sometimes I like to close my eyes and imagine that I’m savoring pistachio gelato in Italy with her, experiencing the sereneness of the ashram in India or riding through the rice paddies in Bali to visit the all-knowing Ketut.
