Got only half an hour to prepare your dinner? Here’s a lovely quick comfort food recipe I’m sure you’ll all enjoy. I also want to introduce our very first guest blogger, Kay. She’s my younger sister who often cooks these delicious recipes at home.
Recently, our mom has been out of town, so we alternate cooking at home. Since we had soooo much bread leftover from the previous week, we decided to repurpose them into this meal as toast!
Recipe inspired from: The Chronicles of Ms. I-Hua. Prep time: 30 minutes. Serves 4.
- 2 tbsp olive oil
- 2 shallots (diced)
- 1 can (400g) whole tomatoes (crushed)
- 4 Italian sausages (cooked and crumbled)
- 1 tsp of paprika
- ½ tsp of ground cumin
- ½ tsp of cayenne pepper
- 2 tbsp ketchup
- 2 tbsp brown sugar
- salt & pepper to taste
- 8 large eggs (room temperature)
- dash of parsley flakes
- 4 slices of bread (cut diagonally)
- 1 can of beans (optional)
Step 1: Preheat the oven to 400 °F. Dice up some shallots and sauté till soft in olive oil.
Step 2: Add the crushed tomatoes (including the liquid), Italian sausage, paprika, cumin, cayenne pepper, ketchup and brown sugar. If you want to make this dish even more hearty, add the beans during this time as well.
Step 3: Cook for about 8 minutes till it reduces slightly. Add salt and pepper to taste.
Step 4: Transfer the mixture into individual dishes.
Step 5: Break 2 eggs into the mixture and add a dash of parsley. Place the dishes into the oven and cook for 10 minutes or until the eggs are set.
Step 6: Serve with toast and enjoy!
We served it with a thick smoothie which is why we were all happy full after the meal. This dish is great for both breakfast or dinner… and lunch too, of course! Hope you enjoy this simple hearty dish… and let us know what you think about it!
